We had a Pig Roast for our Sunday School class and some extra friends on Labor Day. Here's the pig. |
Geof ordered a 25 pound pig, but when he went to pick it up, the butcher said the smallest he had was 34 pounds. |
We quickly decided to invite a few more to the party, and began the preparation. |

Here we are using the Cajun injector to add extra flavor. |
Makin' sure he's clean. |
Putting him on the rack. |
All ready to go in the smoker. |
He's in the smoker. |
Barely fits! Good thing he was 34 instead of 35 pounds. |
We started smoking him Friday night. |
Judy checks what's going on and lets all the smoke out. |
Hummm... this takes a while. How about a little music? |
Geof got up in the midle of the night to stoke the fire, and found it RAINING! We needed to keep the water out of the chimney, so Geof arranged an umbrella. By the way, smoked umbrella does NOT taste good. |
The next morning, the pig looked like this. |
Peel off the skin, and find all the TASTY meat. |
Judy helps carve it up. |
Ready to serve! We forgot to take pictures of the all the friends who came. The Feists, the Luetjens, the Conners, Jim and Jody Ellison, and Lee Yoder. We had a good time. |
